Make easy homemade pickles! With the addition of a few simple ingredients, you can easily make pickles at home in just an hour. Refrigerator pickles are crispy and easy to assemble, require very little preparation, and take just a few days to absorb all the pickling spices.
Here is one simple recipe to get you started.
EASY REFRIGERATOR PICKLES
- 3 1/2 cups water
- 1 1/4 cups white vinegar
- 1 tablespoon sugar
- 5-6 cucumbers (wash well and leave skin on)
- 2 cloves garlic, whole
- 1 T of The Tiny House Farm pickling spice
- 1 TSP dry mustard
Clean and dry medium small cucumbers. Make into spears or long stacker slices.
Stir water, vinegar, sugar, mustard and sea salt together in a saucepan. Bring to a boil then remove from heat and let cool completely (if you don't let it cool the cucumbers will shrink up).
Place cucumbers, garlic, and pickling spice in a large container with a lid. Pour cooled vinegar mixture over cucumbers leaving the tips of the cucumbers (about 1-2 in.) standing out of the mixture. Close the container and refrigerate for 3 days.
That's it! You now have pickles ready to eat in a few days.
Ingredients: mustard seed, cinnamon, ginger, black pepper, dill seed, coriander, cloves, allspice, chili peppers, and bay leaves.
