3 lb. Dried Elderberries
You must cook Elderberries if you plan to eat them. The leaves and stems are toxic. The fruits of the elder tree are edible, but due to the presence of a cyanide-like chemical they must be cooked first.
Whole ripe elderberries, which have gone from green to reddish purple to almost black, have long been used to make pies, pastries, jams, jellies, wine, cordials and syrup. The dried berries are also added to tea blends.

How to Make Homemade Elderberry Syrup

How to Make Homemade Elderberry Syrup
INGREDIENTS:
- 1 3/4 C distilled or Filtered water
- 1/3 C. Tiny House Farm Elderberries
- 1 Tbl. dried organic ginger root
- 1/2 tsp. organic cinnamon powder or 1 small cinnamon stick
- 1/4 tsp. cloves
- 1/2 C raw honey
DIRECTIONS:
- Pour all ingredients except honey into a pan.
- Bring to a rolling boil.
- Reduce the heat and simmer for about 45 minutes or until it is reduced by half.
- take off the heat and mash in the berries.
- Pour the syrup through a fine mesh sieve.
- Now stir in the honey until it is dissolved.
- Sterilize a glass bottle or a mason jar.
- Pour the syrup into the sterilized bottle and store in a dark cool location.
This recipe will make approx. 8 oz. To make a larger batch, just multiply the ingredients (the reduction time may be a little longer).
